Blueberry Aloe Vera Muffin

A: Mix

1 pkt yoghurt (ard 100g)

120g sugar

1 egg

70g melted butter

B: Sieve

180g flour

1t baking powder

1/2t salt

C: Blueberry

Pour B into A, stir, DON'T OVERMIX, ok to see some flour, mix in blueberry

Bake 175C for 18mins or till cooked.

Peach Pastry Cake

Fruit Pastry Cake (original taken frm happyhomebaking, in red are my changes)

Ingredients

100g Butter

200g Sugar (175g)

50g Sour Cream (yoghurt -- watever flavour i have in fridge)

3 eggs

1teaspoon vanilla essence

1teaspoon orange/lemon zest

210g Flour

1teaspoon Baking powder

Any Fruit topping

Method

Cream butter, sugar n yoghurt, add in 3 eggs 1 at a time n mix well after each addition. Mix in vanilla n zest. Mix in sifted flour n baking powder.

Pour into buttered n floured tin, flatten top, put on sliced fruits (dont have to press it in).

Bake 175C for 25-30mins till baked. Cool slightly, remove n serve.

Doraemon Gummy

Thanks to Jandew's recipe, the kids had so much fun! recipe taken from her blog..

Lime Jello Doraemon Gummies
Ingredients
85g flavoured Gelatin powder(I used tortally brand)
2 tbsp unflavoured/plain Gelatin powder
125ml water

Method
Put all the ingredients into a pot and heat over the fire(low heat)
Stir till everything is melted.
Do not boil.
Leave aside to cool.
Lightly oiled plastic molds with vegetable oil
Pour melted gelatin into it.
Leave it in the freezer for 5 mins only.
Remove from freezer and pull out the gummy bear from the mold.

Long time no post.. dono bz with wat oso.. :p cant b baking, don think i baked anything since the boy's bday.. OH! which i haven blogged about yet....

Made them 2 cakes, with toy toppers. Zen's cake {blackforest}, Jovi's {Strawberry Buttercream w MMF barney - not a bad barney for 1st try} cakes turned out kinda nice.. haha.. thick skin hor.. Cupcakes (Jovi's) n mini doughnuts (Zen's) for childcare.. Too many fotos.. think will blog in separate post.. :)

Before the bday cakes.. hmm.. Swiss Rolls! the {Peach Swiss Roll} is gd.. {Chocolate banana} is weird.. dono y the chocolate cake recipes all got problem. Either too hard or not chocolate-y enuff.. mayb i choosy ba..

Made a batch of super mini moist choc cupcakes (recipe), think the casing too small.. machiam like volcano erupted.. better stick to minis.. =_=

oh.. n the batch of Macarons i brought over to Stephy's for potluck.. {Pepper Macaron w Buttercream}, {Coconut Macaron w Pandan Buttercream}, {Chocolate Macaron w Blackberry Buttercream}.. The HistoryThe undisputed historical fact is that some time in the fifth century the Indian priest Bodhidharma, through a grueling regimen of meditation and self-deprivation, attained satori, a state of enlightenment. Darumas teachings became the foundation of Zen Buddhism, which he later introduced to China where it flourished and produced several off-shoot sects.

Late in the twelfth century, Zen became the favored sect of Buddhism among the samurai. The basic practice of Zen centers around long sessions of zazen, seated Zen meditation, which is supposed to free the mind of the illusions of this world so one can attain enlightenment. Along with the establishment of Zen came the introduction of tea, since green tea was used to ward off drowsiness during long zazen sessions. It is said that Daruma carried green tea plants with him on his journey to China, so even today at some Zen monasteries throughout Japan a special tea ceremony is performed honoring Daruma.

In one version of the legend, Daruma is said to have sat in meditation facing a cave wall for nine years without blinking or moving his eyes. In another, he even cut off his eyelids because he got irritated with himself for dozing off. Yet more versions of the Daruma legend have it that the first two green tea plants in China sprang up on the spot where he threw his eyelids. Anyway, after facing the cave wall for those nine years (some tales say seven) Daruma legs shriveled up and fell off from non-use. This is why Daruma dolls have no legs. All in all a pretty fearsome sight, what with his bearded scowl and vacant eyes.

To the Japanese, Daruma represents discipline, determination, sacrifice and forbearance. Come the New Year, many companies buy a large Daruma and paint in one of the eyes representing their goal for the coming year. The painted eye of Daruma is always open and focused on the goal; when it is reached, the other eye is painted in. Both eyes open, in fact, is an expression for success in Japan. Individuals, too, carry out this practice for personal goals such as passing tests or getting a job.

Political candidates at the beginning of an election period will often buy a Daruma and when they win have a celebration party where it is customary for the victorious candidate to paint in the other eye. At the end of the year all the Daruma dolls are taken to the temple where they are burned in a big bonfire and new dolls are taken home or back to the office.

The saying most often heard about Daruma goes Seven times pushed over, eight times rises. To the Japanese, Daruma is a reminder of the resilience and determination needed to achieve success.

Takasaki City -the hometown of Daruma dollTakasaki City (Gunma Prefecture), 100 kilometers north of Tokyo, is the capital of the Daruma doll, a good luck charm, representing a famous Zen monk. The tradition of the Daruma doll as a good luck charm was started at Takasaki Shorinzan Daruma Temple several centuries ago and has since spread across Japan.

Today, Takasaki remains the major producer of Daruma dolls, and Shorinzan Daruma Temple continues to host the country largest and most famous Daruma market (Daruma ichi) annually on January 6 and 7, attracting thousands of visitors and offering Daruma dolls of all sizes.

what exactly do ppl see me as?

do i seem so useless? afraid of hard work? or mayb i've been having things too easy? just realized, ppl who noe me all see me as the happy-go-lucky ger, never have to worry bout stuff, smile abit n everything will be alrite.

hmm.. after awile, i become what ppl tot me to be. never putting in effort, doing the minimal to pass time. when will i ever succeed? ever had ppl tell u, this its too difficult to do, u'll never be able to do it. n u dont.. proving them rite.

pms? mayb.. i'm finally growing up. sometimes, even smiling seems difficult, but ppl expect u to, smile at kids, family, at work. life sux, i'm old enugh to know. there are times when even ppl like me will be too tired to look for the silver lining. cant go ard blaming ppl for not believing i do try my best, when i'm the 1 who has been giving the impression all along.

think i'm not making sense to ppl who noe me. zz.. i've known ME for 28yrs, n still trying to figure what i'm thinking half of the time. have to buck up soon, not gona look back when i'm 50 n realise there are so many things that i might've or should've done, but too lazy to do.

not quite sure y i'm feeling lidat, izit cos it's so late? but 12.39am is normal for me to be still awake. hmm.. think i'm juz too tired of ppl not believing in me. who's to know better den me, what i can n cant do. damn sianz, better go sleep. lucky for me, being in this frame of mind wont last long.

Recipe : Chawamushi

Recipe : Chawamushi

100 ml chicken stock
1 egg
watever ingredients u wan

beat stock n egg, sieve into bowl, add in watever ingredients, steam 15mins. Depending on how hard/soft u wan the egg chawamushi, u can add more stock or more egg.. No need to season if using pkt stock. =)

i prefer 1 egg to 120-130 stock, peter usually make for him 2 eggs to 100 stock.

juz did the 2nd batch.. used flower cookie cutter instead of the bird.. so i noe wich is wich.. hmm this wan is melt-ier.. lol.. but not as 'pang' .. mayb cos i too 'dry fry' the tapioca starch with too little pandan leaves.. the previous batch i made use 300g to 3 leaves.. now at least 500g to 3 leaves.. haiz.. cant b lazy.. =_=

gota ask gu to try.. i don like KB so dono nice bo.. all taste the same to me.. lol.. running out of cookie cutters if i wana try another 2 recipes.. have a car n a star left.. hope this batch pass.. den no need to test try recipe liao..

Cotton Candy machines..& Penguin waffle maker!

Juz got a penguin waffle maker from morries last week.. so cute!! each time can make 2 penguins wif indents at the tummy area for filling.. ice creams.. scrambled eggs etc.. haven had a chance to try it yet... mayb tonite.. :p post up some pix frm other 'penguin users'

Had the cotton candy machine since donkey years ago.. no chance to bring out n use after the 1st time we tested it.. all it takes is a teaspoon full of caster sugar to have a decent size cotton candy.. nice! pix oso frm other users.. mine's not pink.. but deep red.. :)

only posting this blog cos stephy wana see how it looks like.. will try to post up my own pix soon.. looking for waffle recipes! anyone has nice ones.. pls lemmi noe.. :)

went over to uncle lim's place for lunch.. HAPPY BDAY & MERRY XMAS!!

too busy eating to take some fotos of the things uncle cooked! argh! nvm.. CNY still got chance.. VERY YUMMY!

jovi saw dad drinking beer.. so HE OSO WANA DRINK.. haiiz.. so bad mom dat i was.. let him have a few sipz.. tot he'd find it too bitter.. who noes.. zzzz... he slept well after that thou.. 2hrs at least..

went over to Ehub (bside downtown east).. forgot the name for the BIG PLAYGROUND thing on the 3rd floor.. 4 ppl.. 2 child membership, 4 pair of socks (cute with 'rubber' stars at the bottom to prevent slipping).. cost $48.50.. den additional hr is $4 each.. never extend.. both of them play till like bathing.. *faint*

Strawberry Mochi wif Red Bean filling

Made mochi yesterday nite.. simple recipe. Only thing that takes time is to wrap in the red bean filling.. find it abit too soft.. so increased the amt of glutinous rice flour today.. QQ.. nice! (recipe ask for mochiko flour.. dono wat that is.. some recipe put rice flour, some put glutinous rice flour.. so i mix half half 1st try [soft mochi], 2nd try.. juz rite!)

Mochi recipe

1C boiling water, 1/3C sugar

5 1/3oz mochiko flour

*corn flour to dust*

Stir to dissolve sugar, den add in the mochiko flour, stir to mix. Microwave 1min on high. Supposed to change to abit translucent.. n look cooked..

Stir n Stir.. coat wif corn flour to prevent sticking to surface, knead abit.. peel of small portion, wrap in watever filling u wana add. roll into ball.. coat wif more corn flour.

Last Saturday was 'orchard rd' nite wif zen & jovi.. went cruising along orchard on sat nite.. the decor sux! omg.. damn lousy.. n very messy.. boring oso.. so crowded.. so went down to vivo.. at least there got things to see..

had time to spare before it got dark.. so picked up aunt n ah wee frm holland v.. den went over to west coast park.. 1st time there.. quite ok.. big playground.. had a place where they can see the ship/boats ard.. brought the doggies out to walk oso.. :p

off to make my mochi.. hmm.. will post pix n recipe tomolo.. :D

hmm.. love this batch best! neat feet.. although short like me.. but SOOO NEAT! n taste yummy oso.. strawberry flavoured.. too bad not the whole batch works... will try again tomolo.. more flavours..

had prima deli's blackforest log cake (courtesy of daniel n libing) over at my moms juz now.. never expected it to taste that nice.. too little blackforest though.. heng can still taste the rum..

got the recipe from a book i borrowed from library.. making the 'dough' took 5mins, baking 12-14mins..

Easy Scones

2C flour, 1t baking powder, 1t salt (i never put salt cos used salted butter)
4 oz COLD butter
2/3C milk

Mix butter n flour till resemble breadcrumb. Mix in milk to form soft dough (dont need to use all the milk). Dont overmix. If using cookie cutter, roll out 2" thick n cut with cutter.

I used ice-cream scoop to drop onto cookie sheet to bake, so added in abit more milk n just stirred the whole thing together.

Brush with milk or butter before baking.

Bake 200C for 12-14mins till browned.

**serve hot with jam & butter**

Got the recipe frm a blog.. forgot who's already.. will try to find the author n link it here.. Made the cupcakes in 10mins! so simple.. yet so yummy! TOO moist.. dono if i wana frost it.. scared wait eat liao have sorethroat.. hmm.. read frm the blog that this cupcake will taste nicer if it "sit" overnight.. think the flavours will blend or watever.. if i have enough to last till tomorrow.. will update the difference in taste..

Moist Choco Cupcake (27minis)

Ingredients

200g chocolate, 200g butter (Melt)

mix in 200g sugar (i reduced to 170g.. can still reduce somemore if u want)

beat in 4 eggs, 1 at a time.

mix in 1 heaped tablespoon of flour (i used cake flour)

Bake at 180C for 18 mins until cooked. Den rest in the oven 10 mins wif oven off.

This cupcake is supposed to have the crispy top. Frost if necessary.

New Kenwood Chef and Samsung F480!

Overspent this weekend.. juz got a new kenwood chef.. although pay by installment.. still abit heart pain.. but hor.. more worth it den Kitchen aid.. got the white chef cos cheaper.. only thing i don like is the plastic bowl! sux! but still better than my old handheld mixer of dono wat brand..

was complaining about my hp.. k750i is good when it 1st came out.. but.. now too outdated! the camera sux, the fone sux.. soooo... went over to ps last sat.. after much consideration.. got samsumg F480.. 5mp camera, can add on memory.. don realli like the total touch screen.. but kinda getting used to it already.. very chio! gold color.. still haven uploaded the pix onto pc.. so dono resolution ok anot.. keeping fingers crossed..

Custard Puff

Custard Puff

Puff

Slow boil 250 ml water/UHT milk with 85 grams butter, add salt to taste.

Sieve in 160 grams flour and add into the warm water (or milk), Mix.

The flour should turned into yellowish dough, remove from heat and continue mixing the dough well with a wooden spatula.

Add four eggs and continue beating, till a thick paste.

Pipe onto baking paper and bake at 220C for about 20 minutes or until slightly brown and cooked inside.

Cool. Pipe filling into the bottom.

Custard

Bring 500ml milk and 1t vanilla essence to a simmer.

In another bowl, beat 6 yolks and 100g sugar. Mix in 40g corn flour.

Pour the hot milk into the yolk mixture. Stir, and pour back into the pot, using small fire, keep stirring to prevent the bottom sticking. Cook till thicken.

Pour out n cover top with cling wrap to prevent skin from forming.

Alternative : whip in 100g melted choc for chocolate custard.

Pandan Chiffon Cake

Got the recipe from Quek (ex-NLB colleague).. went to her house long time ago to learn how to make it.. but forgot all about the recipe till recently.. best pandan cake i've ever tasted!

Pandan Chiffon Cake (10 minis)

Ingredients

A : 8 egg whites, 4oz sugar, 1t cream of tartar (stiff peak)
B : 8 egg yolks, 2oz sugar (beat creamy)

3T corn oil
5oz flour, 1t baking powder (sift)
8oz coconut milk (if using pandan juice, blend pandan leaves wif water. Top up wif coconut milk to measure 8oz)

Method

Fold corn oil into B, fold in flour, fold in coconut milk.
Add 1/3 of A into B, mix.
Fold in remaining A till no whites showing.

Fill chiffon tins abit more than 1/2 full, tap few times against countertop to remove air bubbles.
Bake at 180C for 18-25mins, or till cooked.

After removing from oven, invert & wait for it to cool completely before removing from mold.

Banana Muffins (ard 18 standard size)

A: Mix
4 large bananas (mashed)
1/2c sugar (i used ard 90g, depending of sweetness of ur bananas)
1 egg
1/3c melted butter (ard 70g)

B: Sieve
1 1/2c flour (ard 180g)
1t baking powder
1/2t baking soda
1/2t salt
1t cinnamon (optional)

Pour B into A, stir, DON'T OVERMIX, ok to see some flour.
Bake 175C for 14mins or till cooked.

yeah!! finally managed to get the FEET showing! lol.. think is by luck wan.. cos the way i did was EXACTLY the same.. but i microwaved the egg whites on medium for 20 secs.. saw it on someone's blog that it works the same way as ageing the egg...

i managed to COOK some of the whites.. but too irritated to care.. so juz beat the cooked ones n uncooked ones together.. haha.. managed to get stiff peak.. den dumped in my peanut n icing sugar mix... den started to fold n fold..

looks promising.. flow like magma.. no peaks after i pipe.. cross fingers n into the oven they go.. NO WAITING time for it to dry..

TA'DAH!! FEET! happy happy.. but hor.. whole batch not all got feet.. haiz... gota go find out y liao.. n need to invest in a SILPAT.. most prob getting frm amazon ba.. promo on.. anyone wana buy can lemmi noe soon.. keke.. i missed out the one on forum..

Waty n anqi came over yesterday.. played with the 2 boys.. totally went crazy.. laughing away.. made mango moussecake for them to try.. finally got some nice mangos frm shing sheong supermarket on sun.. when gong went to buy 'rations'.. happy with how the cake turned out.. sponge cake nice n soft.. mousse juz nice.. mangos abit too sweet for my taste thou.. prefer abit "sour-er" (hmm.. got this word anot? gota check dictionary liao

abit kua zhang la.. but have been baking these few nites after jovi sleep.. made some earle grey chiffon & marble swissroll last week.. (chiffon is yummy.. taste of TEA.. marble swissroll .. totally no words to describe.. keke.. no wonder i DONT like to make swissrolls..

Been wanting to try durian mooncake.. dono y keep putting it off.. no time.. haiz..

Stephy has been asking me to use her recipe.. finally bought some pandan leaves to steam the plain flour.. find it so leh chei thou.. i steamed a whole kg of flour.. haha.. abit kiasu la.. but skali the skin if realli nice.. den i have to resteam.. so lagi lehchei.. now juz have to get the other flour.. which i seem to forget the name.. so i can start making.. hmm.. izit kou fen? aniway.. think i'll remember once i get to PH..

Gona try the layered yam mooncake as well.. but gota see who can send me to KCT to buy the yam paste.. sooo lazy to make my own.. looking at the forum.. so many nice nice desserts! so talented ppl ard.. esp pink! love her fondant!!! i WANT to go for the wilton course!!! but as usual.. no time.. n nobody to take care of jovi.. mayb when he's older.. hmm.. will i still b so onz to bake...??!! argh!

Long long time no chance to update my blog.. lol..

Went visiting in Muar yesterday.. after we finalli pai pai at 3 temples!! need all the help we can get to be lucky.. keke..

So long never go in muar with my parents.. the last 2 times.. they went with jovi n gu onli.. yesterday drove 2 cars in.. parents, gu, neng yi, peter, me n 2 KIDS! argh! so tiring!! but everyone was saying they sooo cute!

went to watch a few movies this mth.. hellboy2.. chibi.. mummy 3... all so so nia.. CHIBI SUX! omg.. why do ppl say it is good? n the most important thing.. Y NOBODY TOLD ME ONLI HALF A SHOW!!! haiz.. nvm..

all the BIG ppl at IBM.. having biz op retreat or watever they call it.. section representitives.. so stressed when i had to intro myself.. sooo paiseh.. all those ppl saying they work 20yrs, 30yrs, in-charge of this n that section.. !!! when it was my turn.. "Hihi, i'm kendy.. n today my 2nd day of work" keke.. think all stunned..

managed to get myself off the workshop when they take kopi break.. went off to ask michelle where to sit.. she juz said.. "no assigned seats.. we mobile.. so find ani cubicle stating mobile n nobody sitting.. u can sit" haiz haiz haiz... walked 2 rounds.. BO SEATS! lucky got a lady ke lian me.. when i ask her can sit where.. she help me find.. or else.. i realli might juz go home.. think nobody will notice.. :p

Well done!! keke.. presenting my mango mousse cake!! kinda "running ard the box" by the time i reach office.. but still tastes GREAT~~~!!! hmm.. think i never beat whip cream to 70% thou.. cos mousse was kinda too soft if removed frm fridge for long.. my mom's melted.. keke.. forgot tell her need to put in fridge..

Hope will have leftover for aunts to try on sun.. made a total of 4 minis & a 6" i think..

lol.. juz finished making my mango mousse cake.. !!! keke.. 1st time try mousse cake.. dono will set anot.. hmm.. hot n sticky now.. gota cool down n update my ke lian de blog.. so long no post..

1st..made the chiffon sponge 1st.. quite simple.. managed to get those done with not much trouble.. but den.. my slicing sux! the whole chiffon look like got mouse bite after i'm done with it.. but who cares.. since it'll be sandwiched in mousse aniway..

Went ahead to do the mousse.. instruction looks quite clear cut.. beat whip cream 70%... (WTH is 70%?!!@!@) den melt gelatin powder in hot water (that no prob for me).. mix gelatin into mango puree.. (simple!)..

Sandwiched the layers in mousse.. started to doubt if the mousse is in 70% mousse state.. (looks abit wet to me) but den.. still went ahead to assemble.. too late to do anithing about it.. argh!! Pray hard that IT WILL SET!!!

Love my mini moulds.. cant find the flower mousse mould though.. sia huat selling tooo ex! so stuck with my rounds n teardrops.. HOPE I WILL HAVE FOTOS TO POST TOMOLO!!!

happi happy!!! got a new k850i.. but hor.. is blue.. preferred the green set but sold out liao.. bo bian.. paid $188 to recontract.. after all the roadshow discounts n everything.. too bad dono about the promo.. or else can go q up to get the set.. n foc printer.. functions for k850i sort of similar to k800i.. loved the camera, touchscreen & the auto rotate though..

Tried egg tarts yesterday nite.. cos stephy did n brought to work.. juz nice peter went blk A.. so i shared my tart with him.. he went n tell his colleagues his wife will be making so he can bring to let them try.. zz.. long story cut short.. I HAD TO MAKE EGG TARTS!! lol..

quite a easy recipe frm a book stephy borrowed frm Queenstown library... step by step instructions.. yummy results!!

I did the small version.. cos i LOVE small bite size desserts!! Seldom eat egg tarts cos some have very strong egg-y taste.. glad to let u all noe.. MINE DOESN'T!!! keke..

OMG.. juz realised that there are so many things that i wana blog about but HAVEN'T had the time to!! haiz.. there's my cupcake pix that i wana upload.. the egg tarts that i made yesterday, last sun where we went to the airport to welcome roy back to singapore, & the east coast park thing that we went to after the airport thingy.. arrgh!!

Think i start with the AIRPORT trip bah..

Roy came back frm thailand.. SEA GAMES.. got a GOLD!! keke.. clever boy.. :p so many ppl there.. gave foc MILO cos they sponsoring the games.. anyway.. since haven visited T3 yet.. we went earlier to look see look see..

Don't like T3's design.. peter say look like army.. all the greens/browns/grey used in the building.. can see frm both pix still kinda empty so think we better wait till everything up den go again..

Finalli had a chance to eat POPEYES!! love love love the biscuit & mash potatoes! oishii~~

Brought both zen n jovi to the airport.. cos da gu oso got go.. at least got ppl help to look after them.. Roy was too busy giving interviews to talk to us.. so took some pix den decided to go east coast let zen 'ride' his new bicycle..

Upon reaching east coast park.. zen keep running ard wana ride bicycle.. but hor.. he dono how to ride! lol.. my dad tie a rope to the basket den we drag him ard.. after 2 falls.. he dont wana ride liao... haiz.. so mommy.. (ME!!) rode his bike back to the car! for pix.. can check out my fotos..

keke.. time pass so fast!! Jovi is officially 5 mths old yesterday!

He finalli can turn by himself liao!! yesterday nite, keep waking up to check if he got flatten his nose anot.. :p scared he can't breathe.. haiz.. be parents so mahfan..

He so happi can turn.. but poor us.. change pampers oso difficult!! hmm.. when can he start walking n talking???!! Notti boy everytime pull my hair.. sometimes even start eating them oso... zzz... scold him he still dare to laugh! cant stand him..

Zenden coming 29mths on the 14th!! Time flies!!

Still baking yummies.. chocolate cake thing i baked yesterday is so OISHII~~!!!! (but abit "chao tar"). Will post up fotos soon!
