Blueberry Aloe Vera Muffin


A: Mix

1 pkt yoghurt (ard 100g)
120g sugar
1 egg
70g melted butter

B: Sieve
180g flour
1t baking powder
1/2t salt

C: Blueberry

Pour B into A, stir, DON'T OVERMIX, ok to see some flour, mix in blueberry
Bake 175C for 18mins or till cooked.

Peach Pastry Cake

Fruit Pastry Cake craze on SMH forum.. lol.. so die die gota try.. ALL gd reviews frm mommies tat tried the recipe..
 



Fruit Pastry Cake (original taken frm happyhomebaking, in red are my changes)
 
Ingredients
100g Butter
200g Sugar (175g)
50g  Sour Cream (yoghurt -- watever flavour i have in fridge)
3 eggs
1teaspoon vanilla essence
1teaspoon orange/lemon zest
210g Flour
1teaspoon Baking powder
Any Fruit topping
 
Method
Cream butter, sugar n yoghurt, add in 3 eggs 1 at a time n mix well after each addition. Mix in vanilla n zest. Mix in sifted flour n baking powder.
 
Pour into buttered n floured tin, flatten top,  put on sliced fruits (dont have to press it in).
 
Bake 175C for 25-30mins till baked. Cool slightly, remove n serve.

Doraemon Gummy

Thanks to Jandew's recipe, the kids had so much fun! recipe taken from her blog..

Lime Jello Doraemon Gummies
Ingredients
85g flavoured Gelatin powder(I used tortally brand)
2 tbsp unflavoured/plain Gelatin powder
125ml water

Method
Put all the ingredients into a pot and heat over the fire(low heat)
Stir till everything is melted.
Do not boil.
Leave aside to cool.
Lightly oiled plastic molds with vegetable oil
Pour melted gelatin into it.
Leave it in the freezer for 5 mins only.
Remove from freezer and pull out the gummy bear from the mold.

Recipe : Chawamushi

100 ml chicken stock
1 egg
watever ingredients u wan

beat stock n egg, sieve into bowl, add in watever ingredients, steam 15mins. Depending on how hard/soft u wan the egg chawamushi, u can add more stock or more egg.. No need to season if using pkt stock. =)


i prefer 1 egg to 120-130 stock, peter usually make for him 2 eggs to 100 stock.

Strawberry Mochi wif Red Bean filling

Made mochi yesterday nite.. simple recipe. Only thing that takes time is to wrap in the red bean filling.. find it abit too soft.. so increased the amt of glutinous rice flour today.. QQ.. nice! (recipe ask for mochiko flour.. dono wat that is.. some recipe put rice flour, some put glutinous rice flour.. so i mix half half 1st try [soft mochi], 2nd try.. juz rite!)


Mochi recipe


1C boiling water, 1/3C sugar

5 1/3oz mochiko flour

*corn flour to dust*

Stir to dissolve sugar, den add in the mochiko flour, stir to mix. Microwave 1min on high. Supposed to change to abit translucent.. n look cooked..

Stir n Stir.. coat wif corn flour to prevent sticking to surface, knead abit.. peel of small portion, wrap in watever filling u wana add. roll into ball.. coat wif more corn flour.

scones

got the recipe from a book i borrowed from library.. making the 'dough' took 5mins, baking 12-14mins..


Easy Scones



2C flour, 1t baking powder, 1t salt (i never put salt cos used salted butter)
4 oz COLD butter
2/3C milk


Mix butter n flour till resemble breadcrumb. Mix in milk to form soft dough (dont need to use all the milk). Dont overmix. If using cookie cutter, roll out 2" thick n cut with cutter.


I used ice-cream scoop to drop onto cookie sheet to bake, so added in abit more milk n just stirred the whole thing together.


Brush with milk or butter before baking.


Bake 200C for 12-14mins till browned.


**serve hot with jam & butter**

Super moist Choco Cupcake.. YUMMY!

Got the recipe frm a blog.. forgot who's already.. will try to find the author n link it here.. Made the cupcakes in 10mins! so simple.. yet so yummy! TOO moist.. dono if i wana frost it.. scared wait eat liao have sorethroat.. hmm.. read frm the blog that this cupcake will taste nicer if it "sit" overnight.. think the flavours will blend or watever.. if i have enough to last till tomorrow.. will update the difference in taste..


Moist Choco Cupcake (27minis)






Ingredients
200g chocolate, 200g butter (Melt)
mix in 200g sugar (i reduced to 170g.. can still reduce somemore if u want)
beat in 4 eggs, 1 at a time.
mix in 1 heaped tablespoon of flour (i used cake flour)
Bake at 180C for 18 mins until cooked. Den rest in the oven 10 mins wif oven off.
This cupcake is supposed to have the crispy top. Frost if necessary.

Custard Puff

Custard Puff




Puff

Slow boil 250 ml water/UHT milk with 85 grams butter, add salt to taste.
Sieve in 160 grams flour and add into the warm water (or milk), Mix.
The flour should turned into yellowish dough, remove from heat and continue mixing the dough well with a wooden spatula.
Add four eggs and continue beating, till a thick paste.
Pipe onto baking paper and bake at 220C for about 20 minutes or until slightly brown and cooked inside.
Cool. Pipe filling into the bottom.
Custard
Bring 500ml milk and 1t vanilla essence to a simmer.
In another bowl, beat 6 yolks and 100g sugar. Mix in 40g corn flour.
Pour the hot milk into the yolk mixture. Stir, and pour back into the pot, using small fire, keep stirring to prevent the bottom sticking. Cook till thicken.
Pour out n cover top with cling wrap to prevent skin from forming.
Alternative : whip in 100g melted choc for chocolate custard.

Pandan Chiffon Cake

Got the recipe from Quek (ex-NLB colleague).. went to her house long time ago to learn how to make it.. but forgot all about the recipe till recently.. best pandan cake i've ever tasted!



Pandan Chiffon Cake (10 minis)




Ingredients

A : 8 egg whites, 4oz sugar, 1t cream of tartar (stiff peak)
B : 8 egg yolks, 2oz sugar (beat creamy)

3T corn oil
5oz flour, 1t baking powder (sift)
8oz coconut milk (if using pandan juice, blend pandan leaves wif water. Top up wif coconut milk to measure 8oz)


Method


Fold corn oil into B, fold in flour, fold in coconut milk.
Add 1/3 of A into B, mix.
Fold in remaining A till no whites showing.


Fill chiffon tins abit more than 1/2 full, tap few times against countertop to remove air bubbles.
Bake at 180C for 18-25mins, or till cooked.

After removing from oven, invert & wait for it to cool completely before removing from mold.

Banana Muffins

Banana Muffins (ard 18 standard size)


















A: Mix
4 large bananas (mashed)
1/2c sugar (i used ard 90g, depending of sweetness of ur bananas)
1 egg
1/3c melted butter (ard 70g)

B: Sieve
1 1/2c flour (ard 180g)
1t baking powder
1/2t baking soda
1/2t salt
1t cinnamon (optional)

Pour B into A, stir, DON'T OVERMIX, ok to see some flour.
Bake 175C for 14mins or till cooked.
